
Grandma’s Recipes – Hobo Dinner
This is one of those recipes that you find in your grandmother’s recipe box that reminds you that that generation was not too far removed from the bleak days of the Depression. I wrote a post here all about the food of the Great Depression and this recipe fits so classically well into that time.
My dad remembers his mom making this recipe most of the time for camping trips. It is a perfect recipe for the outdoors without a lot of fuss, preparation or measuring! I don’t know if these would work well cooked in a fire, but it would be neat to try.
I did try this recipe and made it for my family, but let’s just say my dinners, (though delicious!), were very unphotogenic 🙂 I would encourage you to give these a try though as they are very easy and a meal in one! You can add whatever other veggies you might like as long as you cut them into pieces that will cook quickly. And you can use whatever meat you want as well. I used ground turkey. Feel free to include whatever spices you would like as there is no seasoning listed with these. I used salt, pepper, garlic powder and barbecue sauce.
Using aluminum foil, tear the foil into rectangle lengths.
Crimp all four sides of the pieces of aluminum foil to create packets and rub the bottom of the packet with oil.
Peel and slice the potatoes and put a layer of them at the bottom of each foil packet.
Put one hamburger pattie on top of the potatoes in each of the foil packets.
Top the hamburger patties with sliced onions and carrots.
Carefully seal up the aluminum foil packets around the meat and veggies so no juices can escape.
Cook at 350 degrees for 1 hour.
