Grandma’s Recipes – Molasses Cookies

Sadly, we have come to the very last recipe of this series. I have so enjoyed spending this summer trying out my grandmother’s recipes and sharing them all with you!

To conclude this series, I decided on trying out a cookie recipe. Because what goes together with grandmothers in our memories more than warm baked cookies? And as fall is just around the corner, I though molasses cookies would be a great way to get our palates ready 🙂

These are a very soft drop cookie with a nice, but not overwhelming, spice flavor. When they first came out of the oven, I could taste the coffee in them. These would be delicious with a cup of tea or hot cider! Or you can, like we did, sandwich them together with cream cheese frosting and make a delightful spice sandwich cookie!

 ¾ cup Shortening or Butter
 1 cup Sugar
 2 Well-Beaten Eggs
 1 cup Molasses
 4 cups Flour
 1 tsp Salt
 1 tsp Soda
 2 tsp Cinnamon
 1 tsp Ginger
 ¾ cup Strong Coffee

Cream the butter or shortening and the sugar together.

Add the eggs and molasses and beat well.

Mix the dry ingredients together.

Add the dry ingredients to the wet ingredients alternately with the coffee.

Drop by round spoonfuls onto a cookie sheet.

Bake at 350 degrees for about 15 minutes.
