Grandma’s Recipes – Salmon Loaf

I love this recipe as it is such a decided switch from the usually hamburger meatloaf popular during my grandmother’s time to something a little different. I have to admit, I wasn’t too thrilled about trying out this recipe! It didn’t sound that appetizing to me. It has a very 60-70s vibe to it 🙂
But, I am so glad I tried it! I would definitley make it again. It came out not too fishy tasting, firm and with a really good flavor and just the right amount of salt. If you used a seasoned cracker in this, something like a garlic flavored cracker like I did, it brings it up a notch too! Serve with tartar sauce.

 2 cans flaked Salmon or Tuna (6 oz. each)
 1 tsp Salt
 1 tsp Pepper
 1 cup Scalded Milk
 1 tbsp Butter
 1 tsp Lemon Juice
 2 Egg Yolks, Beaten
 2 Egg Whites, Beaten
 1 Small Onion, Chopped
 1 cup Cracker Crumbs

Flake and break up the salmon in a bowl.

Combine together the crumbs, milk, salt, pepper, butter, onion, yolks and lemon juice in a separate bowl.

Fold in the beaten egg whites last.

Add this mixture to the salmon and stir gently.

Place the mixture into a well-greased loaf pan.

Bake at 350 degrees until done and the edges are brown.
