Grandma’s Recipes – Spinach Salad

I was actually surprised to find a recipe for an actual salad in my grandmother’s recipes! I expected mainly gelatin salads to be in her collection since that is what was popular during her day. There were a fair amount of gelatin salads, but there was this recipe too. It’s an easy recipe that goes together quickly and makes a great lunch. It can quickly be more dressed up too for company.

 ½ lb Spinach, torn in shreds
 1 small Bermuda onion, sliced
 ¼ cup diced Celery
 4 hard cooked Eggs, sliced
 Salt and Pepper to taste

Toss the above ingredients together slightly. Or you can leave the hard cooked eggs off and serve them on the side.

Chill in the refrigerator until ready to serve. You can serve it plain or lightly toss with salad dressing.
