Make Your Own Sufganiyot!

I thought it would be perfect to end our month of holiday exploration in the Middle East with a recipe! Because who doesn’t love making something delicious around the holidays? If you have never had them before, sufganiyot is the name given to the scrumptious jelly-filled doughnuts enjoyed around Hanukkah time. The word “sufganiyot” comes from the Hebrew word for “sponge”.

This is an old recipe supposedly from a bakery in Jerusalem that makes these every year by the hundreds. Don’t be afraid of the deep frying. Just take your time and think about how delicious they will be. Enjoy!

 2 Packages of Yeast
 ⅓ cup Sugar
 ¾ cup Water
 ¼ cup Orange Juice
 ⅓ cup Butter or Margarine
 ½ tsp Salt
 5 cups Flour
 3 Egg Yolks
Jam or Jelly of your choice
 Powdered Sugar

1

Mix the water, sugar, orange juice and yeast and let stand for 10 minutes.

2

Melt the margarine or butter, let cool a little and then add to the yeast mixture.

3

Beat in the egg yolks.

4

Add the flour and salt and mix and knead by hand until you have a soft dough. (You may not need all the flour.)

5

Let it rise for 1 to 1 1/2 hours until almost double in size.

6

Roll the dough out to about 1/4 to 1/2 inch and cut circles. Let these rise for a 1/2 hour.

7

Deep fry the circles for about 3 minutes flipping once.

8

When they are cooled, pipe in the jam or jelly and roll in powdered sugar.
