Matzo Energy Balls

If you are looking for a tasty way to try out matzos or want something different and new for Passover, give these a try! Most of the time, energy balls are made with oats or some other grain that is not allowed during the week of the holiday of Passover. These are made with matzos though and are so very easy to customize. For an easy dessert, these are delicious dipped in chocolate! I created this recipe when we had a lot of extra matzos left over one year. Enjoy!

 4 Matzos, pulsed in a food processor until they are very fine crumbs or use Matzah Meal
 3 tbsp Chia Seeds
 ½ cup Chocolate Chips, Dried Cranberries or other Dried Fruit
 ½ cup Peanut Butter, Almond Butter or Sunflower Butter
 ¼ cup plus 2 Tbsp. Date Silan or Honey

In a large bowl, mix all the ingredients together until they stick.

If they mixture is too wet, add more matzo crumbs. If the mixture is too dry, add more date silan or honey.

Roll into balls the size of a walnut.

These are best after first chilling them for an hour or so. Store in the refrigerator.
