Coconut Pudding Jello

 2 cups Coconut Cream or Coconut Milk Or Use 1 13 ounce can
 ½ cup Sugar
 ½ cup Cornstarch
 1 cup Milk
 6 tbsp Cold Water

In a small bowl, mix the cornstarch and cold water. Stir the cornstarch until it is dissolved. This may take some effort!

In a medium size saucepan, pour in the coconut cream, milk and sugar.

Heat on medium heat until the sugar is dissolved. (About 2-3 mins.)

With the coconut mixture still on the stovetop, whisk in the cornstarch and water mixture. Mix well.

Keep stirring until the mixture becomes thick and pudding like. This is important as the mixture needs to thicken on the stovetop in order to set properly. This will take about 8 to 10 mins.

Remove the coconut mixture from the stovetop and let cool for a few minutes.

Pour the mixture into a lighly greased 8 x 8 inch square glass dish.

Refrigerate for 2 to 6 hours until firm.

When firm, cut into small squares and enjoy!
