Old Fashioned Applesauce

 4 Pounds Apples, Peeled, Cored and Thinly Sliced (About 12 large apples)
 1 cup Sugar
 ½ cup to 1 cup Hot Water
 ¾ tsp Ground Cinnamon (Optional)

In a large Dutch oven, kettle or pot mix the apples, sugar and cinnamon.

Let stand for 30 minutes until juices start to form. Stir once or twice.

Cook covered over very low heat until very juicy, about 10 minutes.

Continue cooking over medium heat until soft and desired thickness for about 20 to 30 minutes.

During those 20 to 30 minutes, watch the apples carefully so they do not scorch or burn. You may add the 1/2 cup to 1 cup of hot water at this time to help with that.

When the apples are done, you can either mash them with a potato masher to make them more like applesauce or blend them on low speed in a blender.
