Salmon Loaf
2 cans flaked Salmon or Tuna (6 oz. each)
1 tsp Salt
1 tsp Pepper
1 cup Scalded Milk
1 tbsp Butter
1 tsp Lemon Juice
2 Egg Yolks, Beaten
2 Egg Whites, Beaten
1 Small Onion, Chopped
1 cup Cracker Crumbs

Flake and break up the salmon in a bowl.

Combine together the crumbs, milk, salt, pepper, butter, onion, yolks and lemon juice in a separate bowl.

Fold in the beaten egg whites last.

Add this mixture to the salmon and stir gently.

Place the mixture into a well-greased loaf pan.

Bake at 350 degrees until done and the edges are brown.
