Ambrosia with Honey Cream

 6 cups your Favorite Fruits, cleaned and cut into bite size pieces (Cherries, Mandarian Oranges, Apples, Pears, Pineapple, Strawberries, Blueberries, Green/Purple Grapes, Pomegranate Seeds)
 1 cup Unsweetened Coconut Chips
 Lemon Juice, as needed
Honey Cream
 1 carton Heavy Cream, (I use a 16 oz. carton)
 Honey, to taste

Combine all the fruits, except the coconut chips, in a large bowl as if you were making a fruit salad. Sprinkle any fruits that may turn brown with lemon juice before mixing them all together.

Whip the heavy cream until fluffy.

Add honey to the homemade whip cream until sweet to your taste. (Remember that most of the sweetness from this dish should come from the fruit!)

Gently pour the whipped cream over the fruit and fold everything together with a spatula.

Sprinkle liberally with the coconut chips and serve!
