Squash Casserole
6 or 7 Yellow Summer Squash
1 stick Melted Butter or Margarine
2 Large Eggs
½ cup Chopped Onion
1 tsp Salt
½ tsp Pepper
½ cup Crumbled Crackers
1 cup Shredded Cheese

Slice the squash into rounds.

Cook the squash in boiling water to cover until tender.

Drain the squash well and mash.

Add the melted butter, onion, salt, pepper, crumbled crackers, cheese and beaten eggs.

Mix well and then pour into a casserole dish.

Bake at 350 degrees for about 25 - 30 minutes.
