
Taste of the Tropics
When my dad was in his early twenties, he went to Hawaii for the summer. He has never been back since, but has always wanted too! One of the foods that he remembers from his time in the islands is Haupia, a coconut pudding or Jello-like dessert. I grew up enjoying it!
Haupia is an easy, creamy Hawaiian dessert that is great for summertime! It’s fairly straight forward to make, but if you wanted to make it even better you could serve it alongside fresh fruit or put it in a prebaked and completely cooled pie shell with whipped cream on top!
In a small bowl, mix the cornstarch and cold water. Stir the cornstarch until it is dissolved. This may take some effort!
In a medium size saucepan, pour in the coconut cream, milk and sugar.
Heat on medium heat until the sugar is dissolved. (About 2-3 mins.)
With the coconut mixture still on the stovetop, whisk in the cornstarch and water mixture. Mix well.
Keep stirring until the mixture becomes thick and pudding like. This is important as the mixture needs to thicken on the stovetop in order to set properly. This will take about 8 to 10 mins.
Remove the coconut mixture from the stovetop and let cool for a few minutes.
Pour the mixture into a lighly greased 8 x 8 inch square glass dish.
Refrigerate for 2 to 6 hours until firm.
When firm, cut into small squares and enjoy!
